Airlocks Are VERY Important

An airlock is necessary to prevent airborne contamination and to ensure a healthy fermentation.

It excludes air from entering the fermentation jar whilst allowing the carbon dioxide gas produced in the fermentation process to escape.

Water in the airlock acts as a valve. As pressure builds inside the fermenter, the gas bubbles through the water in the airlock.
